Ka'u coffee is a specialty coffee from the Big Island of Hawaii. It is grown in the high elevation of the Ka'u region, which is known for its incredibly fertile soil. Ka'u coffee is known for its full-bodied flavor and aroma, with notes of chocolate, nuts, and fruit. With its high quality and sustainable production, Ka'u coffee is a great choice for anyone looking for a delicious, sustainably-sourced cup of joe.
This coffee is produced by small-holder farmers of the Kaʻū Coffee Mill located in Wood Valley, Kaʻū on Hawai'i Island. It's a natural process coffee. This means, after harvesting, the full ripe cherries were directly transported to drying pads at the Mill. They were dried in the sun for 4 weeks before being moved to mechanical driers to finish off the drying process and moved to the dry mill for milling, sorting, and grading.

Because this coffee is a new offering from the Kaʻū Coffee Mill, they reached out to Pacific Coffee Research for Quality Analysis services. Upon cupping, the team at Pacific Coffee Research awarded this coffee an averaged score of 85.6 which led to their purchase of part of this lot!
